Trying to stay on the wagon…

Okay, so after two weeks of eating healthy, drinking hardly any sodas, and eating almost no cheese or greasy foods like I absolutely LOVE…I kind of fell of the wagon a little. :( One day I ordered Little Caesar’s pizza, then I went to Chuy’s and got a “Big as Yo’ Face” burrito – complete with queso! EEEEK!!! It is so hard to change my eating habits after YEARS of hardly eating anything green!!! So my good friend Erin came to visit me and I decided to try a new recipe. And it IS healthy! See below:

Spinach Fettucine with Parmesan Chicken and Broccoli Rabe

Makes 4 servings

Ingredients:

1 bunch broccoli rabe, cleaned and chopped

6 ounces spinach fettucine

4 teaspoons olive oil

4 (4-ounce) skinless boneless chicken breasts

1 teaspoon salt

1 teaspoon dried oregano

1/4 teaspoon crushed red pepper

1 onion, thinly sliced and separated into rings

4 garlic cloves, minced

1 head radicchio, shredded

2 tablespoons grated Parmesan cheese

1/4 teaspoon freshly ground pepper

1/4 cup chopped fresh basil

1. In a large pot of boiling water, cook the broccoli rabe 2 minutes. With slotted spoon, transfer to a bowl. In the boiling water, cook the fettucine according to package directions; drain.

2. In a large nonstick skillet, heat 2  tablespoons of the oil. Add the chicken, salt, oregano, and red pepper and saute until cooked through, 4-5 minutes on each side. Transfer to plates and sprinkle with Parmesan cheese.

3. In the skillet, heat the remaining 2 teaspoons of oil; saute the onion and garlic until tender, 3-4 minutes. Stir in the broccoli rabe and radicchio; cook, stirring frequently, until tender, 4-5 minutes. Add the fettucine, then sprinkle with the remaining cheese and black pepper. Serve topped with the chicken and sprinkled with the basil.

Per Serving (1/4 of pasta with 1 chicken breast): 339 calories, 8g fat, 2g sat. fat, 0g trans. fat, 92mg cholesterol, 746mg sodium, 37g carbohydrates, 5g fiber, 29g protein, 147 mg calciu

  1. I love it! Your recipes look delicious, but I know all about he wagon. I fell off today. I have a cold, so I thought I was entitiled. Haha. They just opened a darn Little Caesar’s down the road. It’s just too easy. Happy belated birthday sweetie. I actually remembered the day before, and then I forgot on the 6th! Miss ya and love ya.
